Cashew Cereal!

Here is a recipe that I have made a couple of times, and I love it more and more every time. I really enjoy being able to make things such as cereal. Especially this one. This cereal is not crunchy. So if you are looking for a crunchy cereal-- this is not it. It has a bit of a chew to it. I am not so into cereals that make my gums bleed. !! I enjoy this cereal with almond milk.

Cashew Delight!

4 cups of oats. ( I use a variety of them: Rye, spelt, kamut etc...)
1 cup of coconut (unsweetened)
1/2 TSP cinnamon
1/2 TSP sea salt
1/3 cup raw honey
1/3 cup olive oil
1/3 cup juice ( no sugary juice either- unsweetened, we want naturally sweet)
1/2 cup chopped raw cashews
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/4 cup hemp seeds

Directions

- mix cashews, oats , cinnamon and salt
- whisk oil, honey, juice together
- mix it all together
- spread out on a baking pan (thin layers-- you may need to do several batches)
- bake until golden brown, make sure not to burn!
- at the end when all the cereal is done, add in the hemp seeds.

*I drizzle honey over the whole batch again. not too much. This is not necessary however.








What's so good about this cereal?

Pumpkin seeds - zinc, essential fatty acids

Hemp Seeds - protein, essential fatty acids and essential amino acids.

Cashews - Antioxidants, healthy monounsaturated fat and copper

Oats - dietary fiber, selenium , vitamin E , zinc

Honey- boosts immune system

Olive oil- monounsaturated fat
